We Have Our
Geese in a Row!
Spring and early
summer is always
an exciting time
at East Brother
Island. It's
like we are
right in the
middle of Mother
Nature's
nursery.
On neighboring
West Brother
island, and in
the surrounding
waters, we can
see seal pups
playing and
relaxing with
their families.
Often times,
they can be
found sunbathing
on our side of
the straight
between the two
islands.
There are more
Brown Pelicans
flying and
fishing around
the island than
we've ever seen
in previous
years, and over
50 Western Grebe
have taken to
resting on the
north side of
the island when
the water is
calm. It is
surely a sight
to be seen! The
baby geese have
also hatched
this spring, and
we've watched
them as they
went for their
first swim
closely guarded
by their
parents.
Come and visit

excitement about
the wildlife
around the
island and
don't forget

Secrets from
Anne's Galley
May's recipe is
Anne's
Belgian
Chocolate Mousse.
This easy to
make dessert is
the most popular
at the
lighthouse. A
common Belgian
dessert, it is
no surprise that
Belgium holds
the highest rate
of annual
chocolate
consumption in
Europe with an
average of about
9.5kg per
person, per
year. Guests
often find this
decadent dessert
so irresistible,
that those who
can't finish it
will ask to
refrigerate it
for the next
morning's
breakfast. We
hope you enjoy
this special
dessert,
compliments of
the Inn Keppers'
kitchen.
Ingredients:
4 eggs,
separated
9 oz chocolate
*I use
Ghirardelli
chips part
semi-sweet, part
bittersweet
2 tablespoons
sugar
Instructions:
1. Melt
chocolate slowly
in a double
boiler over low
heat.
2. Whip the egg
whites with a
dash of salt
until they form
firm peaks.
3. Stir sugar
and egg yolks
until color
changes to light
orange and add
the melted
chocolate.
4. Carefully add
small amounts of
the egg whites
to the chocolate
mixture, folding
them in lightly,
not stirring or
beating.
5. Pour into
individual bowls
and refrigerate
for at least 2
hours. Garnish
with a cookie or
fresh berries.
Serve.

Meet Our New Innkeepers!
At the beginning of February
Anne and Ed Witts took over
as Innkeepers of East
Brother Light Station. Some
of you were fortunate
already to experience their
gracious and warm
hospitality, and enjoy
Anne's exceptional creative,
french inspired cooking.
To all of you who didn't
visit us in February or
March, here are your new
hosts:
Anne Witts is a native of
Belgium, and speaks four
languages (English, French,
Spanish, Dutch). As a former
Sabena and Delta Airlines
first class cabin attendant
she traveled all over the
world. She also worked as a
tour guide in Brussels.
Ed Witts most recently
worked as a civilian for the
U.S. Army NATO support base
in Chievres, Belgium and has
worked for several years as
a professional Yacht Captain
all over the world. He was
also Director of Sailing for
the California Maritime
Academy.
Becoming Innkeepers at East
Brother Light Station has
been a dream of Ed's for
years. What a coincidence
that the position opened up
just when they moved back to
the United States and were
ready for a new adventure.
